Roasted Vegetables
Check out your local farmer's market for fresh vegetables to pair with your favorite Barber Foods recipe! This recipe can be customized to include your favorite veggies - we recommend using butternut squash, zucchini, broccoli, red peppers, carrots, acorn squash, cherry tomatoes, mushrooms, and fingerling potatoes.
Ingredients
- 4 cups your favorite season vegetables, peeled and cut into 1'' pieces
- 1/3 cup olive oil
- 2 teaspoons salt
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon chopped rosemary
Cooking Instructions
- In a large bowl, whisk together salt, spices and olive oil.
- Add vegetables and toss to coat.
- Transfer to 13x9'' ovenproof pan and roast at 375°F for 20-25 minutes, or until fork tender.
