Grilled Peach and Fresh Mozzarella Salad
Ingredients
- 2 firm, ripe peaches (about 1 pound), quartered
- 10 ounces baby arugula
- 1 cup fresh mozzarella, cut into small pieces
- 1/4 cup torn fresh mint leaves
- 1/2 cup extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey (or agave)
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Sprinkle with fresh pistachios (optional)
Cooking Instructions
- Grill peaches cut side down on preheated, oiled grill at 450 - 550 degrees F. Grill until well-charred, moving frequently - about 4 minutes.
- Toss together arugula, mozzarella, mint, and pistachios (if desired) in a large bowl.
- Whisk together olive oil, vinegar, lemon juice, mustard, honey or agave, salt, and pepper in a medium bowl until well combined. Drizzle vinaigrette over arugula; toss to combine. Serve grilled peaches over salad.
