Corn and Quinoa Salad
Ingredients
- 1/2 cup uncooked quinoa, well rinsed
- 1/3 cup diced red onion
- 2 tablespoons lime juice
- 1 cup canned black beans
- 1 cup frozen corn, defrosted
- 1/2 cup green peppers, chopped
- 3 medium tomatoes, chopped
- 4 ounces fresh Mozzarella or Queso Fresco, cubed
- 1/4 cup cilantro, chopped
- 3 tablespoons olive oil
Cooking Instructions
- Cook quinoa according to directions. Empty in bowl, fluff and allow it to cool.
- Slice red onion into slices and soak in cold water for 5 minutes, drain and dice.
- Rinse and drain black beans and mix with lime juice, diced onions, chopped tomatoes, corn, cilantro, cheese and oil.
- Toss with cooled quinoa and salt to taste. Chill or serve immediately at room temperature.
