Carrot Kale Slaw
Ingredients
- 1 cup shredded kale
- 1 cup shredded green cabbage
- 1 cup shredded red cabbage
- 1/4 cup dried cranberries
- 2 medium carrots, julienned
- 2 tablespoons finely diced red onion
- 2 tablespoons mayo
- 1 teaspoon sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
Cooking Instructions
- In a small bowl, whisk mayo, mustard, sugar and apple-cider vinegar. Season with salt and pepper.
- In another bowl, combine kale, cabbage, carrot, and red onion with dried cranberries.
- Season with salt and pepper, drizzle with dressing, and toss to coat. Chill until ready to serve.
